Paxton 2019 McLaren Vale Chardonnay, $25
This is from Paxton’s NOW range, which stands for Natural Organic Wine. Not only is it organic, but it is biodynamic as well, with no added preservatives (which means you should drink it up quick, which isn’t going to be hard at all). Vibrant and crisp with lemon and lime aromas and a hint of butterscotch, it’s got some interesting complexity and a nice long finish. This is the second Chardonnay release in Paxton’s NOW range, which kicked off with a Shiraz in 2016 and a Chardonnay in 2018.
