Devil’s Lair The Hidden Cave 2017 Chardonnay, $20
I first came to love this wine a few years ago when I had the enviable task of tasting a number of Margaret River Chardonnays side by side. I noted then how much this one stood out in its price category, both for its finesse and its complexity. It was great to revisit it over a convivial lunch where it paired beautifully with Asian-inspired salads and fresh summer dishes. Elegant and harmonious, it enticed us with its creaminess and gentle citrus and apple notes. The oak is obvious but not heavy-handed, making it perfect for quaffing (80% French oak, only 20% of that new, with the remaining 20% fermented in stainless steel). We think it would have made a beautiful match for seafood too.
