Chandon 2015 Vintage Blanc de Noirs, $39

This elegant sparkling wine is a blend of Pinot Noir and Meunier from two elevated vineyards that are among the coldest and finest vineyards in the Yarra Valley. With a fine bead and persistent mousse, it has classic Pinot Noir characters of plum, quince paste and fig, with background notes of biscuit and nutmeg. Having spent around 42 months ageing on yeast, it has a lovely complexity, beautiful balance and great palate length.

We enjoyed the Chandon 2015 Vintage Blanc de Noirs with Chicken and Broccoli Pasta and thought it paired very well, the acidity offsetting the cream and the earthy minerality complementing the broccoli. The winery recommends it with Cantonese roast duck; crispy roast pork with roasted root vegetables; and hard cheeses like gruyere. Yes to all of those!
