How very true Christine. I love Cabernet and while we will always struggle to match Bordeaux, Coonawarra does a very good job at quality Cabernets, a point emphasised to me when on Monday I had the pleasure of consuming a 1993 Wynns Cabernet at Rockpool. It was magnificent. What Reschke said in the article about giving Cabernet some bottle age is absolutely right. Reminded me of the famous Redman classics. Like everything good, Cabernet takes more effort, and while Shiraz seems to reflect the Australian ‘taste’, give me Cabernet any day for its complexity. Peter
How lucky that you were able to experience a 1993 Wynns, and at Rockpool moreover. Wynns is a brand that just keeps getting better and better under the stewardship of Sue Hodder and the viticultural team.
