Beat the summer heat with these refreshing mojito and maple ice blocks. Sweet maple syrup meets zesty lime, cool mint, and a splash of white rum for a frozen twist on the classic cocktail. Perfect for the upcoming long weekend.
Mojito and Maple Ice Blocks
Makes 4
INGREDIENTS
¼ cup pure maple syrup (preferably golden colour for its delicate flavour – see note below)
1 cup water
1 lime, zested and juiced
1/8 cup white rum
METHOD
In a small pan, heat the maple syrup, water, lime zest and half of the mint leaves. Leave to cool and then strain into a jug, discarding the mint and lime zest.
Add the lime juice and rum. Divide the mixture into the ice lolly moulds. Add in the reserved mint leaves.
Cover with mould lid and insert sticks. Freeze until solid.
Note: There are four grades of pure maple syrup, each with its own flavour – golden, amber, dark and very dark. Light in colour with a sweet, delicate flavour, golden is made from the sap collected at the beginning of the season.
