How to make pickled onion: Halve and thinly slice a large red onion and place it in a jar. In a small saucepan, pour ¼ cup red wine vinegar, ¼ cup water, 2 tablespoons apple cider vinegar, a heaped tablespoon of sugar and a heaped teaspoon of salt. Heat slowly till simmering. Pour the hot mixture over the onion and make sure all the slices are submerged. Put the lid on the jar and keep refrigerated.
