Simple Strawberry Syrup: Heat 1 cup water and 1 cup caster sugar in a saucepan until the sugar is dissolved, then add 2 cups of sliced strawberries. Simmer for 20 to 25 minutes until soft and syrupy. Strain if you wish. Store in a clean glass jar in the fridge. Play around with the recipe – try adding a vanilla bean or bay leaves, thyme, rosemary or even chilli, before straining.
