An easy sauce for chicken, pork, meat or fish: In a blender, combine 3 tablespoons red wine vinegar, 3 tablespoons pitted kalamata olives, a smidgin of honey, ½ cup Dijon mustard, 2 cups spinach leaves, and 1 cup basil. Stream in ¼ cup olive oil as you are blending. Season with salt and pepper.
