Shopping at the Capital Region Farmers Market at the weekend, I was delighted to come across the handmade chocolates and caramels from Patisserie Valerie. I’ve been following Valerie Badiou’s work for many years, as I first met her when she was a young apprentice chef working for the family business, Croissant D’or.
The bakery has been an institution in East Row, Canberra, for decades and is renowned for its high quality products. Valerie has studied at the Savour chocolate school in Melbourne and with Jérôme Landrieu from the Barry Callebaut Chocolate Academy in Chicago.
We bought a selection of her chocolates and they were all exquisite – so good in fact that it’s impossible to choose a favourite. Here’s what we tried: milk chocolate with passionfruit filling; salted caramel (of course!); milk chocolate with lychee; dark chocolate with caramel and ginger; dark chocolate with lavender. Nom nom nom.
