For an easy Zucchini Slice, mix 350g grated zucchini, a chopped onion, 6 chopped bacon rashers (uncooked is fine), a cup of grated cheese, a cup of self-raising flour, ½ cup of extra virgin olive oil and 5 lightly beaten eggs. Pour into a greased pan and cook at 180 degrees C for 20 minutes. Alternatively, cook in muffin pans for about 12 minutes. Serve with sour cream if you like.

How good to see this recipe posted here. I first read it in an Australian Women’s Weekly cookbook in the late 1990’s and ever since it has been a family favourite – great for parties also. By omitting the bacon is a wonderful vegetarian option also. Cheers – Tonya Jennings, Melbourne Australia.
