FoodLogoSweet potato wedges: Combine 3 tablespoons extra virgin olive oil, 2 tablespoons finely chopped rosemary leaves, a tablespoon of finely chopped thyme leaves and a good dash of salt and pepper. Toss in 6 to 8cm wedges of peeled and chopped sweet potato and mix till well coated. Bake in a 200 deg C oven for about 30 to 40 minutes till golden.
