Here’s how to make a quick gravy à la Nigella Lawson: Combine in a saucepan 50g dark muscovado sugar, 125ml beef stock, 1 tablespoon of red wine vinegar and 4 tablespoons each of Dijon mustard, soy souce, tomato paste and redcurrant jelly. Whisk while it is heating up then pour into a jug to serve.
