An easy accompaniment for fish: Drain a can of chickpeas and mix them in a bowl with a sliced red onion, 100g feta, a handful of cherry tomatoes and pitted olives, and some torn basil. Drizzle with olive oil and a teaspoon of sherry vinegar, then season to taste. This is a nice, easy accompaniment for fish (which can be cooking while you toss the salad together).
