Recipe for lime curd: Combine a quarter of a cup of lime juice, 2 teaspoons of lime rind, ½ a cup of caster sugar, 2 lightly whisked eggs and 40g chopped butter in a saucepan over low heat. Stir until the curd thickens and coats the back of a spoon.
