An easy spring onion relish to serve with meat or fish: Finely chop 2 spring onions, a green chilli and half a cup of mint leaves. Mix with half a teaspoon of chilli paste, 2 tablespoons olive oil, 1 teaspoon caster sugar, and salt and pepper to taste.
