Strawberry Jam: Put 1kg hulled and chopped strawberries, 1kg sugar and the juice of half a lemon in a large pot and heat slowly, mashing it occasionally with a potato masher. When the sugar has dissolved, increase the heat and boil vigorously for 4 minutes or until it reaches 105°C on a sugar thermometer. Remove from heat and skim any scum from the top, before bottling in sterilised jars.
