Tuna salad: Mix together roasted sweet potato, roasted red capsicum, green beans, cherry tomatoes, canned chickpeas, canned tuna and a good helping of basil. Mix 2 tablespoons of balsamic vinegar and 2 tablespoons apple juice for an easy dressing. Sprinkle feta on top.
