Roast strawberries: Hull and quarter a 250g punnet of strawberries, place in a roasting pan and add 2 tablespoons caster sugar, 2 tablespoons balsamic vinegar and 1 teaspoon vanilla extract. Make sure the strawberries are well coated, then roast in a 180 degree C oven for about 20 minutes or until nicely caramelized. Serve with vanilla icecream, yoghurt or rice pudding, and top with basil leaves.
