To do a confit of fish a la Tetsuya, heat 100ml olive oil and toss in half a bunch of basil leaves. Warm through then cool slightly. Marinate fish in this for about an hour. Place the fish on a tray with the marinade, season and bake in a 100 deg C oven for 15 minutes, turning once or twice, until just cooked.
