Watermelon granita: Combine ½ cup of caster sugar and 1⅓ cups of water in a saucepan over high heat. Stir and bring to a simmer, then remove from heat and cool completely. Combine 2 cups of watermelon puree, 1 teaspoon vanilla bean paste and 2 tablespoons lime juice with the sugar syrup, pour into a container and freeze for at least 4 hours.
