Friday Food TipFoodLogoHow to make perfect pork crackling: Dry the skin thoroughly then place it in the refrigerator (uncovered) overnight. When you’re ready to cook it, pat it dry again, score the skin and rub oil and salt into it. Cook in a very hot oven for half an hour or until the skin starts bubbling. Then turn the oven down and continue cooking till it is nice and crisp.
